Inspector’s notes

The rinse temperature in a mechanical warewashing operation was not adequate to sanitize dishes and utensils. Observed high temperature mechanical dish machine with final rinse temperature < 180F. Article surface temperature observed at 150F. PIC placed service request for diagnostics. Provide necessary repairs. PIC to ensure equipment is operating to manufacture's specifications prior to next usage. Three compartment sink to be used intermily.
