3.3(I)(3) - VI. Time/Temperature Controlled Safety Food - Reheating For Hot Holding
Ready-to-eat TCS food, commercially processed and packaged, was not heated to =135° F for hot holding. FIXED ON SITE. The internal temperature of a corn dog was measured at 108F. All corn dogs from the previous lunch period were to be thrown away, and were quarantined to prevent cross contamination.
Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.
