6.4(K) - Controlling Pests
The presence of insects, rodents, and other pests is not being adequately controlled or minimized. Observed the presence of gnats inside the kitchen and in the area where the soda machine is located. The Person in Charge (PIC) said that the gnats are likely due to excess humidity and floors requiring proper cleaning. The PIC reported that Ecolab is scheduled to clean the floors and fumigate the affected areas.
The inspector found mice, rats, cockroaches, flies, or evidence of them (like droppings) inside the business, or conditions that could attract them. Pests can spread bacteria to food and surfaces, so this is treated as one of the more serious findings.

Equipment food-contact surfaces or utensils were not sanitized before use and after cleaning. Observed equipment stored without being properly sanitized in the three-compartment sink. The Person in Charge (PIC) promptly sanitized the equipment and instructed the staff on the importance of sanitizing all equipment after cleaning.
Food was stored or handled in a way that could let germs or other material get into it, such as raw meat stored above ready-to-eat food or uncovered food. Cross-contamination is a common cause of foodborne illness.
