What it means
Staff were not washing their hands when required, or a handwashing sink was blocked, missing soap or paper towels, or used for something else. Hands are one of the most common ways germs reach food.
How serious is it?
Each department labels its own findings. The severity shown on a restaurant’s record comes from the official inspection, and a past finding may have been corrected. Look for follow-up inspections.
