Observed raw meatballs on baking tray stored on prep table without active prep temperature control. Internal temperature measured at 85 *F. Operator stated meatballs were prepared this morning. One tray was put in oven to bake and other one returned to walk in refrigerator. All PHF must be held at 41 *F and below or 135 *F and above. Discontinue storing PHF out at room temperature without active temperature control.

Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.

Hot water tempeture readings were at 100F in the preparation sink, 103F in the 2-compartment sink, and 110F in the 2-compartment sink in the warewashing area. [CA] Hot water temperature shall be at least 120F in the 2-compartment sinks, and preparation sink, and hot water temperature once it reaches maximum must remain at the required temperature. [COS] Hot water temperature was at 121F.,
