Observed tomato soup (119 degrees F) and chicken soup (115 degrees F) in the oven. These are being held in the oven in case patients ask for soup. Lunch service is over. Maintain potentially hazardous foods out of the temperature danger zone ( 42 - 134 degrees F). Reheat soups to 165 degrees F or higher. Tomato soup reheated to 205 degrees F. Chicken noodle soup reheated to 200 degrees F. Keep soups in bain marie on the stove or in the steam table at 135 degrees F or above.

In addition, hot water temperatures fluctuating from 110*F to 95*F at all sinks.
