Major bbq meat at 90F stored in trays on racks in storage area near cook line. Per PIC, it was cooked 30 minutes ago and will be prepared again before delivering for an order. [CA] PHFs shall be held at 41°F or below or at 135°F or above. [COS] PIC used a time sticker to ensure the PHFs are used with 4 hours from when it was taken out of temperature control and any leftovers will discarded.
