Observed cardboard lining shelves in preparation area and towels lining shelves in walk in fridge. [CA] Discontinue use of cardboard and towels to line shelves. Use approved equipment made of materials that is easily cleanable, durable, smooth, and nonabsorbent.

Per PIC, it just arrived and they are not using it. [CA] Remove vacuum sealing equipment from facility. If equipment is to be used, standard operating procedures must be approved by this department. A HACCP plan submitted to CDPH may be required.
