Imitation crab stored on the preparation table was measured at 76 oF. The PIC said the food has been out for more than two hour for preparation. [CA] Food may be stored out of the safe temperature zone for a maximum of two hour diligent preparation. Please rapid chill the product inside the walk-in cooler to 41 oF before reusing it. The PIC relocate the product and brought a new batch from the walk-in cooler (COS).

Couple of wet/soiled wiping cloths were stored on the counters. [CA] Wet/soiled wiping cloths must be stored in a bucket that has standard sanitizer concentration in between use which is 200 ppm quaternary ammonia or 100 ppm chlorine (bleach).
