Observed a light bulb under the hood was not functional. [CA] Repair/replace light bulb.
Floors, walls, ceilings, lighting, ventilation, or garbage areas needed repair or cleaning. These are usually less urgent than food-handling problems but still need to be fixed.

On top of a prep insert lid: measured internal temperature of cooked shrimp to be 60F. Employee stated the shrimp had been held for 10 to 20 minutes. [CA] Keep potentially hazardous foods at 41F and below or 135F and above. [COS] Shrimp was immediately moved to the reach-down section of the prep refrigerator.
Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.
