The hot water knob for the hand sink in the back kitchen in inoperable. Operator stated it is in process of repair. [CA] Ensure faucet is operable. One of the faucets at the 3 comp sink is inoperable. Operator stated faucet is in process of repair. [CA] Keep equipment in good repair. Repair immediately. Observed drain lines for the steam unit drains directly inside the floor sink without an air gap. [CA] Provide a minimum of 1 inch air gap from the rim of the floor sink to the end of the waste lines.
