[CA] Food contact surfaces shall be properly cleaned and sanitized using an applicable sanitizer such as chlorine sanitizer at 50 PPM OR quaternary ammonium sanitizer at 200 PPM. [COS] Operator replaced sanitizer in the sanitizing compartment with quaternary ammonium sanitizer measured at 200 PPM.
