Observed facility operating without a janitorial (mop) sink installed. Per previous permit condition, facility required to installed a mop sink through plan check. Per operator, wastewater is currently disposed through the toilet and the floor sink underneath the warewash machine. Observed a wet mop stored in a bin with used wiping cloths. [CA] Ensure a janitorial sink is installed within the facility to allow for disposal and drainage of wastewater. Ensure mops are hung over a janitorial sink to air dry.
