1) Multiple refrigeration units are lacking thermometers. [CA] A thermometer +/- 2°F shall be provided and correctly located in each cold holding unit containing potentially hazardous foods. Place thermometer where it is easily visible while checking refrigerator temperature. 2) Facility is lacking a metal probe thermometer to measure internal food temperatures. [CA] An accurate easily readable metal probe thermometer (accurate to +/- 2°F) that is designed to measure the temperature of thin masses shall be provided and readily available to accurately measure the temperatures of potentially hazardous foods.
Equipment, utensils, thermometers, cutting boards, or single-use items were not in good condition, not the right type, or not stored properly.

In the 3 door prep cooler (top inserts): raw pooled eggs, sausage patties, sliced american cheese, sliced turkey, sliced ham, and sliced tomatoes measured between 44-47F. Operator stated that raw pooled eggs were placed in unit at 7am. All other food items were placed in unit less than 3 hours prior. [CA] Potentially hazardous foods shall be held cold at 41F or below. [SA] Raw shell eggs were voluntarily discarded. Remaining food items were relocated to the display cooler portion of front walk in cooler.
Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.
