Ham inside the walk-in cooler was measured at 55F while the ambient temperature of the unit was measured at 37F. Employee is unsure how long the food was stored out before it was returned into the walk-in cooler.[CA] Potentially hazardous foods when cold holding shall be held at or below 41F. [COS] Employee voluntarily discarded the ham.
