Power outage occurred mid inspection. [CA] Provide power to facility for coolers and other equipment. Keep all coolers closed and discard any food that are hot or needs to be cooled. [SA]Per operator snacks that have already been prepped are on TPHC for service and were discarded afterward service per procedures, and all PHFs for lunch service shall be discarded after logging. Per operator they will be keeping all coolers closed until power outage is over and temperatures will be taken to determine safety and shall be discarded if deemed unsafe. Provided operator with power outage handout with temperature chart for reference. School must provide meals to students and per operator, menu for lunch shall be shelf stable products(fruit, sunbutter and jelly sandwiches).

In the top convection oven, vegetarian burger patty measured at 116F. Per operator, vegetarian burgers were reheated less than 30 minutes prior and were about to be transfered to hot holding cabinet. Convection oven was observed turned off. [CA] Potentially hazardous foods shall be held hot at 135°F or above. After reheating, ensure food items are immediately transferred to hot holding unit. [COS] Vegetarian burgers were reheated to an internal temperature of 165F then transferred to hot holding unit.
