The cold holding unit is not holding food temps at 41 degrees F and below. The pico de gallo was at 49 degrees F and the sour cream at 50 degrees F. These items sit for about an hour before needing to be refilled with new from the walk in. [CA] PHFs must be held at 41 degrees F and below. The owner placed ice under all of the items on the cold holding unit. Repair the unit to hold PHFs 41 degrees F maximum.
