Proper hot and cold holding temperatures
Chicken wings, sliced tomatoes, and chicken livers in the prep cooler measured between 48-50F. Per cook, they moved items into the cooler from the walk in around 2 hours prior. [CA] PHFs shall be held at 41°F or below or at 135°F or above. [COS] PHFs were moved back to the walk in cooler to cool down.
Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.

Droppings in both areas were wet, unable to verify if droppings were fresh. Note: Areas of concern regarding harborage and entry were noted to PIC. [CA] Clean and sanitize area of droppings immediately. A follow up inspection will be conducted within 24 hours to verify compliance.
