Observed dried rodent droppings around floor sink. Observed possible cockroach ootheca sacs (dried) under food prep sink. [CA] Deep clean and sanitize floors and walls. Recommend working with professional/licensed pest control and set up monitoring traps.

Observed wet and heavily soiled wiping cloths on floor under warewash machine. [CA] Wiping towels shall be stored in sanitizing solution of an approved concentration when not in use (100 ppm - chlorine, 200 ppm - quaternary ammonium). Wiping towels shall otherwise be stored clean and dry.
