1) Facility is lacking quaternary ammonium test strips. 2) Facility is lacking thermolabels. [CA] Testing equipment and materials shall be provided to adequately measure the applicable sanitization method used during manual or mechanical warewashing. Quaternary ammonium test strips shall be provided to measure the sanitizer level in the sanitizer buckets and the 3 composition sink during manual warewashing. Thermolabels shall be provided to measure the water temperature during mechanical warewashing.
