Employee missed sanitizing step while washing a food try.
[CA] Manual warewashing shall be accomplished by using a three-compartment sink where the utensils are first precleaned, washed with hot soapy water, rinsed with hot water, sanitized with an approved method, and air dried. Use 1 TBS of bleach (5.25%) per 1 gal. of water for chlorine solution (100 PPM). Use 1 tbs of quaternary ammonium (10%) per 2 gal. of water for quaternary ammonium (200 PPM).
[COS] Instructed the PIC on warewashing steps, warewash instructions sticker provided. PIC directed the employee to complete the sanitizing step. Quaternary ammonium measured at 200 ppm.
Accumulation of pink mold like substance on inside white panel of ice machine, observed water droplets on the panel which may contaminate the ice.
[CA] Clean and sanitize the ice machine.
[COS] PIC cleaned and sanitized the machine and discarded the top layer of ice.
