Measured hot dogs at 52 F to 56 F on top of ice baths at the preparation line. Cook stated the hot dogs were removed from refrigeration 1.5 hours prior. [CA] PHFs shall be held at 41°F or below or at 135°F or above. [COS] Hot dogs relocated to the walk-in refrigerator to be cooled to and held at 41 F or below.
