minorCode K07Food temperature

Official wording

Proper hot and cold holding temperatures

Inspector’s notes

In the kitchen area, on the shelf across the cook line equipment, a bag of fries was left out of temperature control. [CA] Ensure to maintain Potentially Hazardous Foods under temperature control when not in use. Use only small portions of food during preparation so that it does not exceed the maximum amount of time allowed for diligent prep. [COS] The bag of fries were returned to the freezer.

In plain English

Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.
