In the warmer, sliced ham measured at 75F. Employee stated ham was briefly placed on the flat top grill then placed into the warmer 8 minutes prior to measurement because she needed to prepare the chicken at the back preparation area. [CA]: Potentially Hazardous Food shall be hot held at 135F or above at all times. [COS]: Ham was reheated to 179F.
