Observed open filters under ventilation hood. Accumulation of grease on ventilation hood. [CA] All hood ventilation filters shall be in place and in good repair. Ventilation hood filters shall be maintained clean and good repair.

[CA] PHFs shall be held at 41°F or below or at 135°F or above. [COS]PIC time marked the roast duck to be used within 4 hours from when it was taken out of temperature control.
Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.
