Proper hot and cold holding temperatures
1) In the warmer, curry sauce measured between 86-124F. 2) In the hot holding cabinet, cooked pork measured 81F. Food employee stated that food items were removed from temperature control 30 minutes prior. [CA] Potentially hazardous foods shall be held hot at 135°F or above. [SA] Pork was time marked and will be discarded by 2:30pm. Curry sauce was reheated to 165F. Note: Facility transports curry sauce and pork from their central kitchen: 3334 Victor Court in Santa Clara. SOP's state that food items will be reheated using the turbo chef and a rethermalizer, then placed into hot holding units. Any leftover food at the end of lunch service is discarded. TPHC form observed on site.
Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.

However, facility can submit a mechanical hood ventilation exemption to DEH Plan Check. Facility must submit and have mechanical hood exemption approved by 04/12/2025. If exemption is not submitted and approved, turbo chef must be removed
