[CA] Potentially hazardous foods shall be held at or below 41F to prevent the growth of bacteria.
[COS] Ducks can be dried for one additional hour (2 hours total per CalCode exemption), then must be relocated to a working refrigeration unit OR the drying refrigerator unit must be turned down so that it is capable of maintaining PHF at or below 41F. PIC agreed to aforementioned statement.
