Heavy accumulation of grease on ventilation hood filters. [CA] Clean mechanical exhaust hood and/or filters of grease accumulation.
Floors, walls, ceilings, lighting, ventilation, or garbage areas needed repair or cleaning. These are usually less urgent than food-handling problems but still need to be fixed.

Lack of food handler cards for employees. [CA] Each food handler shall maintain a valid food handler card for the duration of his or her employment as food handler. A valid food handler card shall be provided within 30 days of after the date of hire.
A required permit, food safety certificate, trained manager, or posted sign was missing or not current. These show the business is following the rules and has trained staff.

*Repeat violation Observed numerous old droppings in two containers with old unused equipment next to two door freezer. No other evidence observed. Observed traps set in the back storage area. Per manager, the facility did not have issue for last few weeks, the traps are for monitoring. [CA] Clean and sanitize area of old droppings. Clean and sanitize any contaminated utensils or equipment. Observed flies in the front lobby and front prep area. [CA] Food facility shall be kept free of non-disease carrying insects, weevils, ants, gnats, and fruit flies.
The inspector found mice, rats, cockroaches, flies, or evidence of them (like droppings) inside the business, or conditions that could attract them. Pests can spread bacteria to food and surfaces, so this is treated as one of the more serious findings.

Observed accumulation of cardboard boxes, unused utensils and equipment stored in back storage area. [CA] The premises of a food facility shall be free of litter and items that are unnecessary to the operation or maintenance of the facility, such as equipment that is nonfunctional or no longer used. Observed a gap in back door, the door has to be manually close to eliminate the gap. [CA] Repair the door to self close properly so that there are no gaps.

Lack of soap and paper towels at hand wash sink near dish machine. Observed pans stored in the sink. Paper towel is stuck in dispenser at hand wash sink in restroom. [CA] Provide single use paper towels and soap in dispensers at all times. Handwashing facility shall be clean, unobstructed, and accessible at all times. [COS] Hand soap and paper towels provided. Hand sick cleared. Paper towel dispenser fixed in restroom.
Staff were not washing their hands when required, or a handwashing sink was blocked, missing soap or paper towels, or used for something else. Hands are one of the most common ways germs reach food.

Accumulation of food debris, dust and dirt on floors under equipment. [CA] Floors in food preparation area shall be kept clean. Observed black residue on office wall, per manager (on phone) it is from a fire in 2024. [CA] Clean the walls and maintain facility in good condition.
Dishes, equipment, or surfaces that touch food were not properly washed, rinsed, and sanitized, or sanitizer was not at the right strength. Clean surfaces help stop germs from spreading to food.
