Cooked items packed and left on a table in the dining area. Owner stated that he was using time as public health control (TPHC). However, he could not produce a written policy and no time markers were in place. Items were placed on the tables at 12 pm, according to the owner [CA] Must have a written policy and place time markers for a maximum of 4 hours after which items are discarded. Owner wrote the policy during the inspection and discarded the items by the end of inspection.
