Chlorine sanitizer from the dishwasher measured 0 PPM. Sanitizer bottle was nearly empty. Owner replaced with a full bottle. Sanitizer still measured 0 PPM after running[ two cycles. [corrective action] Repair the dishwasher so that equipment and utensils can be sanitized with a final chlorine rinse of 50 PPM. [suitable alternative] Chlorine sanitizer was set up in the 3-compartment sink. Equipment and utensils can be washed in the dishwasher and must be sanitized in the sink until dishwasher is repaired. Per owner, Autochlor will be contacted to repair the machine.

Pans were covered with plastic wrap. [corrective action] Keep pans uncovered when food is still cooling. Food may be covered once food reaches 41F or below. [correction] Pans were uncovered.
