Numerous pizzas measured 116F while subjected to time as a public health control while maintained in the open-front hot holding case. Physical copy of delivery invoice with initial cook time of pizza was not available. Per the PIC, the pizzas are are cooked the morning of at "Tasty Subs & Pizzas", and the facility is supposed to provide a physical copy of the delivery invoice with the initial cook time written on the paper. PIC was able to provide electronic invoice via email, dated today. However, initial cook time of the pizza was not present. Called the operator of Tasty Subs & Pizzas, who initially stated that the pizzas were cooked at 10:30AM. However, per the PIC of the school kitchen, pizzas had been delivered at 10:25AM. Upon further questioning, operator at Tasty Subs stated pizzas may have been made earlier, at approximately 10AM. Written procedures for TPHC could not be provided. [CA] When time only, rather than time and temperature is used as a public health control, PHFs shall be time marked to indicate when item is removed from temperature control, discarded if not consumed or served within 4 hours, and written procedures shall be readily available for review. [COS] Initial cook times of pizzas provided. Pizzas served or else discarded by the end of lunch service, at 12:30.
