Per PIC, rice was prepared a few days prior and was not recently taken out of refrigeration. All other food items in the walk-in cooler measured at 41F or below. [CA] Potentially Hazardous Foods (PHFs) shall be cooled rapidly from 135F to 70F within two hours, then 70F to 41F within four hours.
