In an insert of the steam table at the center of the kitchen, spaghetti measured 124F. Per staff, spaghetti had been heated and placed into hot holding less than 45 minutes prior. [CA] Potentially hazardous foods shall be held at 41F or below, or at 135F or above to prevent the growth of bacteria. [COS] Instructed employee to reheat spaghetti to greater than 165F and place back into hot holding. Spaghetti remeasured 183F.
