Observed about 5 flies in the meat department. PIC installed 2 insect wall devices today. [CA] Remove flies from facility using an approved pest control method. Maintain facility free of flies that can carry disease.

Observed about 3 flies on the meat department cutting board. Cutting board had raw meat residue and was not being used. Cutting board has dark brown stains and cutting grooves. [CA] Wash, rinse and sanitize cutting board and maintain clean. [COS] Staff began washing and sanitizing cutting board. Replace cutting board if no longer cleanable.

Observed raw chorizo hanging from ceiling bar in the meat department; chorizo sausage measured 67F; per employee chorizo was placed on bar over 4 hours before inspection. [CA] PHFs shall be held at 41°F or below or at 135°F or above. [COS] Chorizo was voluntarily discarded by PIC. See VC&D report.
Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.
