Note: Chef noted that eggs and some other items were stored in double stacked containers to prevent food from freezing. Ambient temperature of this unit measured 31F. Recommend adjusting the ambient temperature slightly higher to prevent food from freezing, as long as food can be maintained at 41F or below.

[CA] Ensure to maintain the facility free of animals, pests, and vermin. Provide pest control as necessary. Clean and sanitize the affected areas of rodent droppings immediately. Provide adequate vermin proofing measures to the premises to prevent entrance and harborage of vermin. Note: Ceiling finishes in the dining room are slats that expose the dining room to the crawl space above. Consider reducing access to the crawlspace above to vermin proof dining area.
