Adequate handwash facilities supplied, accessible
At the only handwash sink in the kitchen, observed the paper towel dispenser was empty. [CA] Handwash station shall be fully stocked with soap and single use towels at all times. [COS] Employees refilled the paper towel dispenser at the time of inspection.
Staff were not washing their hands when required, or a handwashing sink was blocked, missing soap or paper towels, or used for something else. Hands are one of the most common ways germs reach food.

1) On the preparation counter, measured heavy cream and half & half at 61F. Per employee, foods were removed from the under counter refrigeration unit less than 15 minutes ago. [CA] Potentially Hazardous Foods shall be kept at 41F or below or 135F or above. [SA] All foods were relocated to the upright coolers to facilitate rapid cooling. 2) In the 2-door preparation unit at the cook line, measured multiple Potentially Hazardous Foods from 51-53F. Per PIC, foods were relocated from the upright coolers to the preparation unit less than 2 hours prior to temperature measurement. [CA] Potentially Hazardous Foods shall be kept at 41F or below or 135F or above. [SA] All foods were relocated to the upright coolers to facilitate rapid cooling.
Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.
