Observed a large tray of beef and chicken at approximately 90 degrees F. According to the owner they just pulled it out of the oven and then cook it to order on the grill. The restaurant is just preparing for customers at start of inspection. [CA] The meat must not be left out at room temperature after taking out of the oven. The meat must be kept hot at 135 degrees F or kept refrigerated 41 degrees F max and placed in shallow containers about 2 inches high. [COS] The owner placed all meat in shallow containers and put into the refrigerator.
