Chicken nuggets are measured between 111F - 112F inside the upright hot holding unit. Per Staff, chicken nuggets were cooked about 1 hour ago. Observed temperature of chicken nuggets below 135F after increasing temperature settings of hot holding unit. [CA] PHFs shall be held at 41°F or below or at 135°F or above. [SA] Chicken nuggets were relocated to another hot holding unit; reheat to 165F and maintain at 135F or higher.
