Observed employee to exit the employee restroom, push the garbage can aside that was next to the prep table, and begin prepping lettuce for salads. [CA] Ensure employees wash hands prior to any food preparation to prevent possible contamination. [COS] Employee was instructed to wash hands with soap and water for 20 seconds and dry with a paper towel before continuing to prep lettuce. The lettuce that was touched by the employee was discarded.
