Inspector’s notes

Rice was found in the steam table measuring between 112F-119F. Per PIC, they reheated it in the microwave about 30 minutes prior. Operator was instructed to reheat rice again and reheated rice to 135F. [CA] Any PHF that has been cooked, cooled, and reheated for hot holding shall be reheated to a minimum internal temperature of 165°F for 15 seconds. [COS] EH inspector educated PIC on proper reheating parameters. Rice was reheated to 165F using the microwave.
