Measured tray of half portions of cooked chicken holding at 132 in 2 door hot holding unit. 3. Measured container of raw marinated pork holding at 45F in 2 door reach in. Per operator, PHFs placed in unit for less than 4 hours. [CA] Maintain all cold PHFs held at or below 41F and/or hot held at or above 135F.
