At the handwash station, observed paper towel roll is stored outside of the dispenser. [CA] Paper towels shall be provided in an approved and sanitary dispensers at handwash stations at all times.

At the poke service line, measured tuna, salmon, and tofu from 50-52F. Per employee, food was changed out and removed from the walk-in refrigeration unit less than 1 hour prior to temperature measurement. [CA] Potentially Hazardous Foods shall be kept at 41F or below or 135F or above. [SA] PIC stated that all food will be replaced or discarded at the end of lunch service (less than 4 hours from initial removal from temperature control).
