[COS] Maintenance technician repaired the sink and turned the water heater up during inspection. Per maintenance, the water is turned down so that employees do not burn themselves. Ensure water is kept at a consistent minimum of at least 120°F.

During active sanitizing in the 3-compartment sink, measured the concentration of quaternary ammonia at 0 ppm. The dispenser does not appear to be properly dispensing sanitizing solution. [CA] Manual sanitization shall be accomplished in the final sanitizing rinse by contacting a quaternary ammonium solution of 200 PPM concentration for at least 60 seconds. [SA] Employee instructed to utilize the high temperature dishwasher for sanitizing dishes, or to manually set up the 3-compartment sink for sanitizing.
