Inspector’s notes

The only handwash sink in the back preparation area by the three compartment sink did not have paper towels provided. [CA] Single-use sanitary towels shall be provided in dispensers. [COS] PIC placed a roll of paper towels. Ensure that paper towels are provided in dispensers.

In plain English

Staff were not washing their hands when required, or a handwashing sink was blocked, missing soap or paper towels, or used for something else. Hands are one of the most common ways germs reach food.
