Inspector’s notes
Boba measured to be 117F in soup well. Per SOPs and operator boba is only kept for 3-4 hours and then discarded and times are labeled on each patch of boba. Boba observed to be missing labels for time. Other jellies observed to have time marking.
[CA] When time only, rather than time and temperature is used as a public health control, PHFs shall be time marked to indicate when item is removed from temperature control, discarded if not consumed or served within 4 hours, and written procedures shall be readily available for review.
[COS] Per operator it is still the first batch of boba of the day so time of labeled for 11:30AM when store opened.
