[CA] PHFs shall be held at 41°F or below or at 135°F or above. [SA] Per PIC, all the PhFs were cooked or brought out from refrigerator within last 1 hour. PIC provided stickers with time to ensure PHFs are used within 4 hours from when it was taken out of temperature control or discarded if there are any leftovers at the end of 4 hours.
