6-201.11 Floors, Walls and Ceilings-Cleanability (C) Observation: Missing or broken tiles are present throughout the kitchen, specifically in front of the prep line, next to the walk-in cooler, and near the 3-compartment sink. Code Citaion: Floors that are of smooth, durable construction and that are nonabsorbent are more easily cleaned. In FOOD ESTABLISHMENTS in which cleaning methods other than water flushing are used for cleaning floors, the floor and wall juncture shall be coved and closed to no larger than 1 mm (one thirty-second inch).
