A chemical sanitizer used in a sanitizing solution for a manual or mechanical operation... shall be used in accordance with the EPA-registered label use instructions and shall have a concentration as indicated by the manufacturer's use directions included in the labeling. If using chlorine bleach, test strips should read 50-100 PPM chlorine. Inspector gave employee handout on proper set up of 3-compartment sink which should not be used as a storage unit, keep accessible and clean equipment routinely not skipping the sanitizer step. Sent picture of test strips that can be used .
