Observed food employee filling french fry containers with ready to eat frys and touching french fries due to improper use of fry filling utensil. 3-301.11(B) Preventing Contamination from Hands, Ready-To-Eat foods. Food employees may not contact exposed, ready to eat food with their bare hands and must properly use suitable utensils such as single-use gloves, deli tissue, spatulas, tongs, or dispensing equipment. Education provided including food handler guide in preferred language.

Hands shall be washed with soap and warm water for 20 seconds, then dried with paper towel. Wash hands between tasks, after handling dirty utensils, before putting on gloves and handling food, and any time hands may be contaminated. Education provided, person in charge aware and will education staff accordingly.
