2-102.11 - Demonstration: I asked the kitchen manager what temperature she cooked the chicken at, and her response was 150°F. Then she said chicken is supposed to be cooked at 155°F, but she cooked it to 167°F. The person in charge shall demonstrate this knowledge by stating the required food temperatures and times for safe cooking, including time/temperature control for food safety, for meat, poultry, eggs, and fish. Talked to the kitchen manager about learning the proper cooking temperatures.
